Spelt Patties with Green Salad

With the carrots and onions, I thought of a recipe from my childhood – spelt patties. You just grind and cook unripe spelt grains, mix them with sautéed carrots, leek, onions, cheese, an egg and some spices. Then you form the patties and fry them until golden. Apart from being rich in fiber and protein, cooked spelt also has a uniquely aromatic taste that comes out perfectly in this recipe.

Ingredients: Unripe spelt grains (coarsely ground) | leek | carrots | onions | cheese (e.g. gouda) | one egg | parsley | mustard | salt | pepper

Recipe: cook the spelt grains in vegetable stock until soft. Let the mixture sit in the pot for a while once you turned the heat off, then drain off any excess water | finely slice leek and onions, grate the carrots and sautée everything with a little oil | grate the cheese | chop the parsley | mix everything together with mustard, an egg, salt and pepper | form patties and let them sit in the refrigerator for 30 minutes | fry in a pan until golden | serve with salad
