This Turkish flatbread is the perfect recipe for a good amount of fresh spinach. With only a few ingredients, this is an easy yet delicious dish that can be enjoyed straight out the oven or the next day.
Ingredients: fresh spinach, onions, feta cheese, flour (wheat or spelt), yeast, olive oil, salt, pepper (egg and sesame for egg wash optional)
Recipe: mix flour with yeast, a pinch of sugar, a drizzle of olive oil, warm water and salt and knead it until the texture is even | let it rise for at least an hour | roughly cut the fresh spinach and the onion | sauté both with a little olive oil until the spinach has wilted | season with salt and pepper and crumble in the feta cheese | roll out the dough into oval shapes and spread out the spinach and feta mixture | pinch the ends together and fold in the sides | brush the sides with egg wash and sprinkle with sesame | bake in the oven at 180C/350F for 30 minutes
